Asparagus soup
Asparagus soup is not only flavorful and delicious, but it's also a great way to use up leftover asparagus. You can also use leftover vegetables you have in the fridge, such as celery, parsnips, and onions.

Peels and bottoms from 10 asparagus spears
1 onions
2 bay leaves
10 peppercorns
2 pieces carrot
½ liter cream
1 liter of water
Salt & pepper
Course of action
Sauté all vegetables in a pot, add pepper and bay leaves. After 10 min. on medium heat, add the water. Cook on low heat for 1 hour and then sieve. Add cream and season with salt and pepper. Can be thinned with butter or cornstarch if you want a creamier consistency.
Can be served with steamed asparagus and meatballs.
