Homemade chips

Make your own delicious and healthy chips from root vegetables. It tastes great and can be used in many different dishes. Also try our homemade dip - it's easy to make and has lots of flavor.

ingredienser

Chips:

Baked potatoes
Selleri
Jerusalem artichokes
Parsley roots
Parsnip
2 liters of flavorless oil, such as rapeseed oil
1 mandolin

Homemade dip:

2 dl crème fraîche
Salt & pepper
1 organic lemon
5 leaves chopped chives (or 1 bunch chives)
1 tablespoon mustard

 

Course of action

Clean the root vegetables and cut them into thin slices on a mandolin, soak in cold water for at least 30 minutes. Then remove from the water and dry on a tea towel or kitchen roll. 

Heat the oil to 160 degrees in a large pot. (Use a tall pot so the oil doesn't splash over the edge.)

Add the root vegetables a little at a time and stir gently in the pan so that they do not stick together. When they are crispy, remove them from the oil and drain on absorbent paper and sprinkle with fine salt. If they do not become completely crispy, you can dry them in the oven at 80 degrees for 2 hours.

Take the ingredients for the homemade dip and stir them all together. Season with lemon zest, lemon juice, salt and pepper.
