Christmas gingerbread cake with orange

CHRISTMAS ALL IN ONE CAKE!

Cinnamon, cardamom, orange, almond, marzipan.

It doesn't get more Christmassy than this delicious spice cake with orange and lemon from Hotel Koldingfjord's baker, Charlotte Erbe.

The cake is perfect for Christmas parties, and can easily stay fresh and delicious for a few days.

Ingredients

150 g marzipan
200 gr. brown sugar
Peel of three oranges
Zest of two lemons
175 g butter
50 gr. wheat flour
10 g cinnamon
6 gr. cardamom
6 g baking powder
4 eggs
100 g almond slivers, preferably roasted

Course of action

Mix marzipan, brown sugar and orange and lemon zest well. Add butter and beat until the mixture is light and fluffy.

Add the eggs one at a time and stir each egg well into the dough.

Add flour, cinnamon, cardamom, baking powder and almond flakes. Mix just until combined and pour the batter into a greased springform pan.

Bake at 160 degrees Celsius for 40 minutes. The cake can be decorated with white icing and almond slivers.
