Ramson pesto

In the forest around Hotel Koldingfjord, wild garlic has just appeared. Wild garlic is found in most coastal forests in Denmark, where it appears in early spring and blooms around May. Wild garlic has a pungent smell and is known to many as nature's garlic. It has a high vitamin C content and can be used in many dishes in the kitchen, such as wild garlic pesto, for which you can find a recipe here.   


ingredienser

100 g ramsons
50 g roasted hazelnuts
100 g havgus cheese (or other parmesan-like cheese)
2 dl Danish rapeseed oil
salt and peber

Course of action

All ingredients are blended together to the desired consistency, and are then ready to serve.

It can be poured into glass jars, which can be stored in the refrigerator.
